This automatic yeast equivalents calculator, for yeast alternatives, assumes the (world's standard practice) weight and volume measures are: Active dry yeast = 0.25 ounce per 2-1/2 teaspoons, Instant yeast = 1 ounce per 3 tablespoons. Fresh compressed baker's yeast weighs 122 - 130 g US measuring cup = 128 - 136 g Metric cup/250mL (for crumbled yeast) and 254 grams per US cup = 268 grams per Metric cup exactly when yeast is tightly pressed into cup (100 percent of all air removed.) Brewer's yeast, even though it is nutritionally rich in protein, chromium, selenium and B vitamins it does not contain essential Vitamin B12 so vegetarians take that into account. A great vitamin B12 supplement solution is to take Folate tablets - Folic Acid, B12 and B6 combination (Folate repairs our DNA as well - I have one table every day.) OK back to the brewers yeast, it is slow-rising yeast (because it produces ethanol instead of carbon dioxide which faster yeasts make), dough will rise much longer even if more yeast was added. Which means; dough can rise more than once, therefore, it can be used to add more flavor or texture into certain/quite marvelous baking. We use it with harder coarser flours, the Spelt flour is just one example.

One sachet of instant yeast from a box may weigh anywhere between 5g to 15g therefore notice this weight number on the original yeast packaging.
I prefer to use the instant yeast as it contains a lot more of yeast living cells, 4 times more than active dry yeast and by 300% more than the compressed fresh yeast. And I also bake a lot with adding the brewers yeast as it produces much nicer flavours and it is healthier to digest - use the calculator above to work our the optimal equivalent amounts to replace other yeasts for powdered brewers' yeast type.
